Giro D’Italia 2018, Stage 20, Susa – Cervinia: Linguine Amatriciana

Ingredients
200g Dried Linguine
400g tin of chopped tomatoes
1 clove of garlic (pressed)
2 Dried Chillies
500g Pancetta (Diced)
75g Grana Padano (grated)
Olive Oil
Salt & Pepper

Heat a saucepan with some oil and add the garlic.
Cook the pancetta until it starts to brown. Add the tomato, oregano, crumbled chilli, and a little water, cover and simmer for 40 minutes.
20 minutes before the 40 are up, bring a separate pan of salted water to the boil.
Add the Linguine, and cook until Al dente (c. 10 mins).
Drain, and then pour over the Amatriciana sauce.
Sprinkle a generous amount of Grana Padano over the top, and enjoy with a hearty glass of red, perhaps try a Barbaresco.
